Carrot Orange Ice Cream

The goodness of carrots and the citrusy flavor of ice cream mixed with a heavy dose of Greek yoghurt and honey. This recipe is an amazing amalgamation of several different flavors, and you would love every one of them. We think that a cinnamon whipped cream is the perfect match for tis one – simply use the cream chargers in the usual way – then add some cinnamon to infuse int the whipped cream.



½ cup carrot juice

½ cup orange juice

1 cup soy milk

1 cup Greek yoghurt

1 cup honey

5 tablespoon sugar

3 tablespoon grated carrot


Beat the Greek yoghurt and add the carrot juice, orange juice and honey to it. Combine well, stirring till the mixture is well mixed. Slowly add the soy milk, and stir together well. Put in a freezer tray and put in the freezer, turning the settings to the lowest one, to make sure the ice cream freezes as soon as it can. After 2 hours, remove the semi-set ice cream, and blend it for 1 minute. Pour back into the freezer tray and freeze for another 2 hours.

Meanwhile, heat the sugar in a pan until it is caramelized. Stir in the carrots, and quickly pour on a silicon mat or greased parchment paper. Let cool down. Once it is completely cooled, break into small shards. Mix this in the ice cream and freeze for another hour before serving. If the ice cream becomes to solid – you can always let it melt and then use the whipped cream dispensers and cream chargers to fluff it up again – sort of like a diy Mr. whip.
